RECIPE OF THE WEEK || STICKY LEMON AND CHILLI CHICKEN NOODLES

Yield: 4 servings

INGREDIENTS:

  200g wholewheat thread egg noodles
  4 skinless chicken breasts cut into strips
  2 Tablespoon cornflour
  8 spring onions, shredded
  100g mange tout, shredded
  2 red pepper, slied
  4Tablespoon soy sauce
  Juice of 2 lemon
  2Tablespoon honey
  4Tablespoon sweet chilli sauce

PREPARATION METHOD:

1. Cook the noodles following the packet instructions.
2. Coat the chicken in cornflour and seasoning and cook in a frying pan with some fry-light spray.
3. Remove the chicken and add the vegetables to the pan and cook for 4-5 minutes.
4. Put the chicken back in the pan and add the lemon, honey and chilli sauce, along with a little water.
5. Cook until you have a nice sauce.
6. Mix with the cooked noodles and serve.
